We had Taco Tuesday at our house last night, so I thought it would be the perfect night to try these 21 Day Fix Slow Cooked Pork Carnitas! I found a recipe which I adapted to create mine on Melanie Mitro’s blog – she raved about them, so I had to check them out for myself! I always love a meal that is in the slow cooker all day so I don’t have to think about dinner until dinner time. Zach and I made it part of our morning activity to prep the pork loin. He helped me by measuring out all of the spices and sprinkling them over the roast. I gave it a good rub down, covered and set it and then off we went to enjoy the rest of our day!

I cut up the tomatoes and onions and washed the romaine leaves while the boys were napping and then set out all of the taco fixing for dinner time. This recipe had a cilantro lime sauce using plain Greek yogurt – that one got a big, fat fail from my husband, but he also doesn’t like sour cream, so…I am still going to include it because I enjoyed it and it added a little extra. It would be ok to omit this part and just use some plain Greek yogurt if you enjoy sour cream on your tacos!
Enjoy!
