A little break from being a carnivore for an evening (haha!)…these southwest black bean burgers – 21 Day Fix Approved, too! – were SO delicious and flavorful! This is one of the recipes from our grilling challenge! My teammate, Emily Berger found the recipe for this and I am SO happy she did! I adapted it for our tastes and BOOM. Basili was upset I didn’t make more! I doubled the recipe I used below so I wouldn’t second guess how much to make for next time! These will freeze well too! Prep them ahead of time and throw them on the grill, frozen, after a long day! 🙂 Easy peasy!
Would you believe this is the only photo I took? I served these with some lightly sautéed mini sweet peppers and zucchini seasoned with oregano and pepper. Topped with some avocado (and some cheese for the boys). When I am doing a dedicated round of the Fix or Fix Extreme, I like to eat all of my yellow containers BEFORE dinner – so I would have this as a lunch on the weekend vs at dinner. When I am not doing a ‘dedicated round’, I will still eat within my container/calorie bracket, but I am not AS strict with the times, it’s a lifestyle after all!
Spicy Black Bean Burgers
Ingredients
Method
- Drain and rinse beans. Dry well.
- In medium bowl, mash beans with a fork until desired consistency is reached.
- In food processor, combine bell pepper, cilantro, onion & garlic and finely chop. Add oats, eggs and spices, finely chop.
- Add mixture to the beans and mix well.
- Divide mixture into 8 patties and place on foil or wax paper - add additional oats if mix is too runny
- Freeze at least 2 hours before grilling - these burgers will freeze well for several days before grilling - great for prep day!
- Grill over medium heat for 7-8 minutes on each side
Notes
1 Burger = 1 Yellow, 1/4 Green, 1/8 Red (seriously, don't count that)
Portion it out accordingly - the black beans are considered a YELLOW. NOT A RED. 🙂 According to what Autumn said at Super Saturday, this is simply based on the make up (macros) in black beans - they are simply more starchy even though they are a source of protein. Adapted from Skinny Taste
